MARK'S FAVORITE CHICKEN SALAD


don't worry about exact measurements...

Ingredients:
2-13 oz. cans chicken, drained
½ C. to 1 C. mayonnaise (depending on preference)
1-2 tsp. powdered mustard
1 ½ T. dry Ranch dressing mix (a little less than 1 pkg.)
3 long celery stalks, finely diced
1 C. red grape halves (about 2 small handfuls)
Slivered almonds, toasted, opt.

Directions:
Drain chicken and place meat in medium-sized mixing bowl. Add ½ C. mayo, powdered mustard (use more if like it spicy) and Ranch powder and gently stir. Adjust mayo to preference. Add celery and grapes, lightly folding in. Serve on bread or croissants and sprinkle with almonds. (Also good served with crackers). I have even served this in Romaine lettuce leaves at parties.

A store-bought rotisserie chicken is great in this recipe too...just use one whole chicken, deboned and chopped, instead of the canned chicken.
