

This toffee is amazing...not bragging on myself...but my Granny! It tastes like something you could buy at a gourmet candy store and makes a great holiday gift! It also freezes well, so you can make plenty ahead of time!
1 C. butter (plus extra to grease pan)
1 C. sugar
¼ tsp. salt
½ tsp. vanilla
¼-½ C. pecans, finely chopped (could also use almonds)
6 oz. chocolate chips
Directions:
Place aluminum foil on a cookie sheet and grease with butter. Spread with chopped nuts. Combine butter, sugar, salt and vanilla in a saucepan on med.-high heat. Stir continually to combine and keep butter from separating. When mixture begins to boil, stir vigorously and cook until golden brown in color and crack stage has been reached (290 degrees on a candy thermometer; about 8-9 minutes once it starts to boil). Immediately pour over nuts and spread with spoon. Quickly sprinkle with chocolate chips. Let stand for 1 minute then spread melted chocolate chips over toffee, using a spatula. Sprinkle with more finely chopped pecans. When toffee completely cools (several hours), carefully break into pieces. Can freeze candy as well.
*Can make a double batch, but no more than that. If making several batches in a row, let cooking pan cool down some in between and wash before starting the next batch.
