Ingredients:
2 C. jicama, finely diced
1 lg. yellow or red tomato, seeded and finely diced
½ C. yellow or red sweet pepper, finely diced
½ C. cucumber, peeled, seeded, and finely diced
½ C. red onion, finely diced
¼ C. carrot, finely diced
1 tsp. jalapeno or Serrano pepper, finely diced
2 T. fresh cilantro, chopped
2 T. fresh lime juice
¼ tsp. salt
Directions:
Combine all ingredients and serve with chips.
