CHINESE SALAD

Salad Ingredients:
1 head Chinese Napa cabbage, chopped*
1 bunch green onions, chopped
2 pkgs. crumbled Ramen noodles, Oriental flavor
¾ C. slivered almonds (1 sm. pkg.)
1/4 C. sesame seeds

*may use 2-10 oz. pkg. Angel hair finely shredded cabbage instead

Dressing Ingredients:
3/4 C. olive oil
6 T. rice vinegar
2-4 T. sugar (I use 2T.)
1 tsp. pepper
seasoning mix from noodles

Directions:
Gently break apart Ramen noodles and place in shallow baking tray; add almonds and sesame seeds. Brown lightly (broil on low for 2-3 minutes). Remove and let cool. Combine with cabbage and onions in large bowl. Add all dressing ingredients in medium glass jar with lid and shake well. Pour over salad just before serving.

Variation: add sliced grilled chicken and a large can of drained mandarin oranges to make a main dish.
